Shrimp Scampi!

Dinner Tonight: Shrimp Scampi this meal was fast & delish. It is important to eat this dish right when its ready to really get all the flavor it has to offer! 🙂

What you will need:

  1. 1 pd of frozen cooked shrimp
  2. 1/2 white wine
  3. 1/4 cup of oil
  4. 4 garlic cloves
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon red crushed pepper
  7. 2 lemon
  8. 1 pd of angel hair pasta
  9. 1 tablespoon of parsley

In a large pot boil water for pasta. In a medium skillet heat oil on medium, add shrimp. Cook for 3 minutes.

After 2 minutes of cooking time, remove shrimp from heat. Add garlic, salt, pepper & white wine. Let simmer then add shrimp let cook for another 2 minutes. When water is boiling, add pasta let cook for 5 minutes.

Drain Pasta, add pasta and shrimp to a serving bowl. Top with parsley & lemon. Mix together & serve.

Time to eat!

Skillet Angel Hair & Turkey Meatballs!

After a long day of nothing but rain ugh, I was definitely in the mood to come home and cook! I was in the mood for angel hair & turkey meatballs (turkey meatballs=less fat) were trying to eat healthy over here! 🙂 Tonight I made a fast sauce with tomatoes, garlic & chickpeas. It was very tasty, try it!

What you will need for the meatballs:

1 1/2 pounds of ground turkey

1/4 cup of italian breadcrumbs

1/2 cup of grated parm. cheese

salt/pepper

1/2 cup of fresh parsley

2 tablespoons of milk

2 eggs

oil

Take all your ingredients, except oil & place in a mixing bowl.

Make sure to wash your hands, of course, & mix ingredients together.

Heat oil in a skillet on medium & start rolling meat into little balls (whichever size your prefer)

Cook meatballs in the skillet for 3 minutes or longer on each side, until fully cooked.

When they are finished you can eat them plain or add them to your marinara sauce!

Moving on to the pasta…

What you will need:

1 pound of angel hair pasta

1 can of diced tomatoes

1 small can of peeled whole tomatoes

salt/pepper

1/2 teaspoon basil

fresh parsley

1 can of chickpeas

1/2 of grated cheese

3 tablespoons of balsamic vinegar

oil

4 cloves of garlic
Serves : 5

In a large skillet, heat oil on medium. Add garlic and tomato, cook for 10 minutes stirring occasionally.In a separate pot start boiling water for the pasta.

Next add salt & pepper, basil, can of chickpeas drained & some chopped fresh parsley.

Cook for 8 minutes. When water is boiling, add angel hair cook for 5-7 minutes.

When pasta is done, drain & add to the sauce skillet; cook for 4 more minutes.

After 4 minutes, pour pasta & sauce into a serving bowl. Add cheese & 3 Tablespoons of Balsamic Vinegar,mix together. Balsamic Vinegar is the secret ingredient, I’ve never tried this before in a pasta sauce but let me tell you it makes a difference! yum.

Dinner is ready!
