Tomato Soup with Garlic Bread.

So, tonight I was roaming through our cabinets and came across this…A HUGE CAN OF TOMATOES.

if you don’t think this is big…look again!

6 LBS of tomato!!! My dad gave us this can of tomatoes a couple month’s ago & at the time I thought to myself when am I ever going to use this???? I finally figured out a way to us it, homemade tomato soup!! Of course there will be extra with this recipe considering its 6 lbs of tomato and a normal tomato soup recipe would only call for 2 lbs 🙂

Serves: 8-10

What you will need:

  1. 6 lbs of plum tomato (can or fresh)
  2. 3 medium onions
  3. 16 garlic gloves
  4. fresh oregano
  5. salt/pepper
  6. 6 cups of chicken broth
  7. 3 tbsp of sour cream
  8. fresh basil

In a large sauce pan, heat olive oil on medium. When hot, add the chopped onion & saute for 6 minutes. Add garlic & crushed red pepper, saute for an additional minute.

Add tomato, oregano & salt, stir for 10 minutes then add 6 cups of broth. Simmer for 10 minutes & add basil leaves.

Let soup cool then add to blender and blend all ingredients. Add additional broth if needed to reach the consistency.

After soup is blended, cook on low for 30 minutes, stirring occasionally. Add sour cream & cook for 5 more minutes. Preheat oven on 400, cook garlic for 10 minutes. Serve soup hot with garlic bread on the side 🙂

** I wanted to use the wheat pizza dough that has been seating in my fridge, so I decided to make a quick bbq, onion & Gorgonzola pizza as well.**

What you will need:

  • a bag of wheat pizza dough
  • handful of flour
  • bbq sauce 1/2 cup
  • 1/2 medium white onion
  • Gorgonzola cheese crumbles

Preheat oven on 450 degrees. Flour your counter or cutting board and roll out pizza dough. In a small skillet heat butter on medium, add sliced onions & caramelize. When pizza is rolled out, add to a baking pan and spray with oil;bake for 20 minutes. When dough is browned, add bbq sauce, onions & Gorgonzola cheese & bake for an additional 10 minutes.

Ok, pizza is ready!

Turkey Chili!!!!!!

Yummy, one of my favorites…turkey chili! My sister Taia hates chili so since she was working late tonight, I decided it would be a perfect night to make it considering the twins & I love it.
What you will need:

  • 1 pound of ground turkey
  • 2 packets of chili seasoning

(By accident I grabbed one taco seasoning 😦 )

  • 2 peppers one red, one green
  • 1 medium onion
  • 2 garlic cloves
  • 2 cans of red kidney beans
  • 1 can of diced tomatoes
  • 1 can of stewed tomatoes
  • 1 6 ounce can of tomato paste
  • cheddar cheese

Start by browning the ground turkey over medium heat, add garlic. Chop the onion & peppers and add to pot.

Now add tomatoes, beans, chili seasoning, tomato paste stir together & cook over low/medium heat for 20 minutes. (Make sure to stir every 5 minutes).

2 steps & your done! how easy was that? Top chili with cheddar cheese, I also added tortilla chips to my bowl to scoop the chili with! 🙂

Lets Eat! a healthy dinner ready in 20 minutes, you cant beat it!

Skillet Angel Hair & Turkey Meatballs!

After a long day of nothing but rain ugh, I was definitely in the mood to come home and cook! I was in the mood for angel hair & turkey meatballs (turkey meatballs=less fat) were trying to eat healthy over here! 🙂 Tonight I made a fast sauce with tomatoes, garlic & chickpeas. It was very tasty, try it!

What you will need for the meatballs:

1 1/2 pounds of ground turkey

1/4 cup of italian breadcrumbs

1/2 cup of grated parm. cheese


1/2 cup of fresh parsley

2 tablespoons of milk

2 eggs


Take all your ingredients, except oil & place in a mixing bowl.

Make sure to wash your hands, of course, & mix ingredients together.

Heat oil in a skillet on medium & start rolling meat into little balls (whichever size your prefer)

Cook meatballs in the skillet for 3 minutes or longer on each side, until fully cooked.

When they are finished you can eat them plain or add them to your marinara sauce!

Moving on to the pasta…

What you will need:

1 pound of angel hair pasta

1 can of diced tomatoes

1 small can of peeled whole tomatoes


1/2 teaspoon basil

fresh parsley

1 can of chickpeas

1/2 of grated cheese

3 tablespoons of balsamic vinegar


4 cloves of garlic
Serves : 5

In a large skillet, heat oil on medium. Add garlic and tomato, cook for 10 minutes stirring occasionally.In a separate pot start boiling water for the pasta.

Next add salt & pepper, basil, can of chickpeas drained & some chopped fresh parsley.

Cook for 8 minutes. When water is boiling, add angel hair cook for 5-7 minutes.

When pasta is done, drain & add to the sauce skillet; cook for 4 more minutes.

After 4 minutes, pour pasta & sauce into a serving bowl. Add cheese & 3 Tablespoons of Balsamic Vinegar,mix together. Balsamic Vinegar is the secret ingredient, I’ve never tried this before in a pasta sauce but let me tell you it makes a difference! yum.

Dinner is ready!

Dinner Tonight: Pesto Pasta with Chicken & Tomatoes

Tonight my sisters & I were in the mood for pasta. Since I made a basic marinara sauce last week, I decided to switch it up. Pesto Pasta it is

What you will need:

  • 1 pound of fettuccine
  • 1 tablespoon of vegetable oil
  • 4 chicken cutlets
  • Salt/Pepper
  • 1 pint of grape tomatoes
  • 3/4 cup of prepared pesto

In a large pot of boiling, salted water, cook pasta, about 12 minutes. While you are waiting for pasta to cook season the chicken with salt & pepper or your favorite chicken seasoning .

In a medium skillet add 1 teaspoon of oil, cook chicken over medium-high heat until lightly browned and firm to touch, about 5 minutes per side. Transfer to a plate and cover with foil to keep warm. Then add tomatoes to the skillet, add more oil if you need to and cook for 5 minutes.

While you are waiting for the tomatoes to cook & pasta to finish, cut chicken into chunks.

Drain pasta & add to a serving bowl along with the chicken & tomatoes. Add 3/4 cup of prepared pesto. Mix all ingredients together until all pasta is coated.
